Here’s a simple chicken stock to make at home. Bone broths are rich in so many nutritions, including calcium, phosphorus, silicon, sulphur and other trace minerals… It’s the ideal winter superfood.
Bone broths also have glucosamine and gelatin, which are often sold as expensive supplements to support joint health and beauty. Gelatin is a therapeutic agent that originated in Chinese medicine. It’s often added to cosmetics products to reduce the signs of ageing.
1 whole chicken
3 carrots
1 red onion
1 stick of celery
1 Bay Leaf
1 Bouquet Garni (I typically use a various mixture of Rosemary, Thyme, Sage, Parsley – simply tie with string)
- Wash chicken thoroughly and place in a large stock pot – fill to the brim with water.
- Chop carrots, onion and celery in 1/2 – then add to the pot.
- Add bay leaf and bouquet garnet (you can tie the bouquet with cooking string to keep it together.)
- Bring to boil for 10 minutes then reduce heat to simmer for appr 45 minutes to 1 hour
Also, to let your creativity run wild…. you can garnish your soups with some of the following:
- Toasted pumpkin seeds
- Chopped toasted nuts – such as walnuts, hazelnuts, and pistachious
- Chopped fresh herbs
- Crisped prosciutto
- Greek yoghurt (possible infused with herbs)
- Grilled vegetables – sliced finely
